that’s it. all celebrations should be potlucks.

I decided to throw myself a small party for my 44th birthday, as I’ve mentioned here 10 or 20 times, and it went okay. You know why? Because instead of doing all the food myself I called out, “Potluck!” and everyone responded.

We had…

* veggie BBQ meatballs in the crockpot
* a Tupperware container full of cut-up PB&J sandwiches (stroke of genius, this)
* hummus, spinach dip and yummy baguettes
* Cowboy Caviar with tortilla chips
* bean dip and salsa (also with tortilla chips)
* fresh watermelon, grapes and strawberries
* homemade cupcakes “scratch from a mix!” and a delicious Pavlova, courtesy of N, who is R’s gorgeously sweet baker sister
* we had the best Warm Feta Spread, thanks to My Husband, the Stud, and Real Simple magazine. Recipe follows:

Warm Feta Spread
Total time: 10 minutes
Serves: 6-8
Heat 1/4 cup olive oil in a skillet over medium heat. Add 1 diced red bell pepper and 2 sliced garlic cloves. Cook until soft, 2 to 3 minutes. Break 1 pound Feta into a serving bowl. Top with warm pepper mixture. Serve with sliced cucumber and pita chips. Bon appetit!

Did I mention the drinks? And the good conversation? And the kids who tore around and around, finding secret hide-outs and having water fights and making me happy that my birthday is in summer?

    We had a potluck reception at our wedding. It turned out lovely, and believe it or not, we had no repeats of food dishes. Also a lot of the guests left their baking dishes, glass platters, crystal bowls, etc. as wedding gifts!

    It was an AWESOME time!! :) I can attest to the wonderfulness of the Cowboy Caviar and the Warm Feta Spread.

    I remember I put flowers in your hair that day! I’d be happy to pass along a glass platter…(full of food of course) speaking of beverages to go with the potluck…do you recall the keg strategically placed behind all the seats outside at our wedding? Quite a sight when vows were done, we turned around and saw a sea of red plastic cups ;)
