Tuesday Recipe Club: Veggie Cream Cheese Snacks

VEGGIE CREAM CHEESE SNACKS (Appetizer)
2 packages crescent rolls � pat out on jelly roll pan or cookie sheet and bake as directed. Cool completely.
Mix well: 2 packages cream cheese (8 oz each)
1 cup mayonnaise
1 package dry ranch dressing mix
Frost the cooled roll mix with the cream cheese mixture.
In a bowl mix � cup of each, finely chopped or grated:
Cauliflower
Broccoli
Carrots
Red Pepper
Green Pepper
Green Onions
Sharp Cheddar Cheese
Mix the vegetables and cheese together and top the frosted roll. Spread all over and press firmly into the cream cheese frosting mixture.
Cut into squares and serve.

Salsa Tomatillo (Green Tomato Salsa)
1 clove garlic — peeled
1/2 yellow onion — peeled
3 chiles serranos — stems removed
2 1/2 pounds tomatillos — husked
1 pinch sugar
4 sprigs cilantro — fresh
salt
water
Preparation:
Use the metal blade of a food processor. Drop the garlic through the feed tube with the motor running. Add the onion and pulse to chop. Place in a strainer and rinse with cool water to remove the bitter milky liquid. Remove the husks from the tomatillos. Rinse and rough chop. Place the tomatillos and chili peppers in the workbowl of the food processor. Pulse to mince finely. Add the cilantro. Pulse to combine. Stir the onions and tomatillos together. Add sugar and salt to taste. Keeps less than 8 hours. Add water if the salsa thickens before being used.
Blue chips or homemade tortilla chips are yummy for dipping!

EASY AWESOME CHICKEN NACHOS (for those of you who eat meat…)
Cut up b/s ch breast into smallish pieces.
Saute with green onions in small amount olive oil
Glop in several spoons of sour cream and let it melt to form a sort of sauce.
Put layer of corn chips in pan, add layer of ch mix, then layer of grated cheese. Repeat at least once.
Bung it in the oven until the cheese is melted.
Voila! So easy and yummy (and fattening). Serve with a really good salsa
