Recipe Club: Refrigerator Pickles
Argh, we forgot to plant cucumbers this year! Did you?
I love this recipe — it’s from my friend M.D.
Refrigerator Pickles
7 c. sliced unpeeled cucumbers
1 c. thinly sliced onion
1 c. thinly sliced green peppers
1 t. salt
1 t. celery seed
1 c. vinegar
2 c. sugar
Mix vegetables, salt & celery seed. Mix vinegar and sugar and pour over vegetables. Mix well. Store in refrigerator 1 day,
tossing the vegetables occasionally.
Store in jars. (They stay crisp!)
Keeps in refrigerator approximately 1 year, after which pickles will lose quality.

I planted them but they didn’t come up. :-( Though I have been seeing a little vine that looks like it’s just starting to flower. Maybe it’ll make some cukes before the first frost!

Hmmm….I should try these. What size container do you use to store this in the refrigerator, though?

Betsy, I used a two-quart (half gallon) glass Mason jar — maybe I used two? Can’t remember, it was all the way last summer. Grocery stores usually carry them in the fall.
